Chef André Simões
His name is André Simões and he’s the Executive Chef of the Hilton Vilamoura, responsible for four restaurants, three bars, room service and banquets.
He was born in Montreal, Canada, and came to Portugal at age 9. It began here, to have the first contact with the Portuguese culture which his family spoke so much in Canada.
Soon he began to develop a great passion for cooking through the dishes he created for his family.
He fell in love with this art and decided to do a traditional and international cuisine course after which he began to as trainee in the Algarve at Le Meridien Penina.
Chef Bernard Luciana was his most important reference.
Chef André’s dedication and persistence led him to Le Meridien Copacabana in Rio de Janeiro, Brazil and to Cameron House in Scotland, a resort with four Restaurants, one with a Michelin star and one with the distinction of 4 Rosettes.
At the Hilton Vilamoura, as Executive Chef, he has the opportunity to do what he love the most: be creative, inspire his team and give customers a memorable experience.
His menus show his taste for Portuguese and Mediterranean cuisine and you can taste them at all Hilton Vilamoura restaurants: Cilantro, Aquarela, Moscada and Al.mar Tapas by the Sea.
